White Sonora is one of the oldest wheat varieties still grown in North America, a soft heritage wheat that has been part of Southwestern baking for more than three centuries. Ours comes from a single farm in Queen Creek, Arizona, and reaches you as whole berries, so you mill it fresh when you’re ready to bake.
Milled fine, it makes a pale, tender flour with a sweet, buttery flavor and a clean, mild finish, with none of the bitterness some people taste in red wheat. It’s the classic wheat for flour tortillas, and it does fine work in flatbreads, biscuits, pie crust, and pastry. Cookies, pancakes, and quick breads come out soft and tender. Brewers use it too, for its gentle sweetness and soft mouthfeel.
How to Bake with White Sonora Flour
White Sonora is a soft wheat, lower in protein than bread wheat, so it builds a tender crumb instead of a tall, chewy loaf. Rest tortilla dough before rolling and it will stretch thin without tearing. For yeast bread, blend it with hard red or hard white wheat for structure.

The Story of White Sonora Wheat
Jesuit missionary Padre Eusebio Kino brought this wheat to the Sonora region around 1685. Tohono O’odham farmers kept it growing for generations, and after modern varieties nearly pushed it aside, food historians revived it in the 1980s. Today it grows again in Arizona, close to where it first took root.
Whole Berries for Your Home Mill
This is a heritage grain, not a blend. You know what it is, you know where it grew, and you decide when it becomes flour. Whole berries keep far longer than flour, and our nitrogen-flushed 7.5 lb bags push out the oxygen insects need. Keep a supply on hand, mill what you need, and bake with flour that’s minutes old instead of flour that sat on a shelf.
