Freshly stone-milled each week, our Bono Rye Flour is the flour bakers reach for to feed a sourdough starter and to give bread a deep, earthy flavor.
Description
Bono is a single variety of cereal rye, freshly stone-milled in Amarillo, Texas. Rye ferments quickly and gives wild yeast plenty to feed on, which is why so many bakers keep a bag beside their starter jar. Blended into wheat dough, it adds a darker crumb and a mildly sour, earthy taste. On its own, it makes the dense, moist loaves rye is known for.
Feed Your Starter, Flavor Your Bread
Whether you are building a new starter or keeping an old one strong, a spoonful of fresh rye in each feeding brings it to life. Pair it with our Sourdough Starter and Sourdough Booster. We stone-mill our grains to keep the natural oils, nutrients, and flavor that industrial milling strips out.
- Starter Fuel: Ferments quickly and helps a sluggish starter rise and bubble again.
- Rye and Wheat Breads: Mix 10 to 30 percent into wheat dough for flavor, or use more for a denser, darker loaf.
- Freshly Stone-Milled: Milled fresh at Revival Mill & Bread Co. for peak flavor and nutrition.
