Put your sourdough discard to good use with this easy bread machine recipe—no kneading, no mess, just soft, flavorful bread with a hint of sourdough tang. Sourdough discard is the portion of starter you remove before feeding, and instead of tossing it, you can bake with it! This recipe simplifies the process by letting your bread machine do all the work, turning that discard into a beautiful, hands-off loaf perfect for everyday sandwiches and toast.

Ingredients

  • 1 1/8 cups (260 g) water

  • 4 cups (500 g) flour

  • 1/3 cup (100 g) sourdough discard

  • 3 tbsp (40 g) butter

  • 1 1/2 tbsp (20 g) sugar

  • 2 1/4 tsp (7 g) dried yeast

  • 1 1/2 tsp (10 g) salt

Directions

  1. Layer the Ingredients: Add ingredients to the bread machine pan in this order: water, sourdough discard, flour, butter, sugar, yeast, and salt (in opposite corners so yeast and salt don’t touch).

  2. Select the Setting: Use the wheat loaf setting with a dark crust for a robust sourdough-style flavor. Alternatively, choose any setting you prefer for a basic white or sandwich loaf.

  3. Start the Machine: Press start and allow the bread machine to complete its cycle.

  4. Cool the Loaf: Carefully remove the loaf and let it cool completely on a wire rack before slicing.

  5. Enjoy: Serve fresh or toasted—perfect for sandwiches or with a slather of butter.
