Muffin Ingredients
- 1 ½ cup oats (I used quick oats)
- 1 ¼ cup Revival Mill malted oat flour
- ½ cup brown sugar (firmly packed)
- 1 teaspoon baking powder
- ¾ teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 cup applesauce
- ½ cup milk
- 3 tablespoons vegetable oil
- ½ teaspoon vanilla extract
- 1 egg
Streusel Topping Ingredients
- 2 tablespoons butter (NOT softened)
- ½ cup oats
- 2 tablespoons brown sugar
- ½ teaspoon cinnamon
Instructions
-
Preheat oven to 400°F. Line a muffin pan and spray liners with nonstick spray.
-
Make the streusel: In a small bowl, mix oats, brown sugar, and cinnamon. Cut in cold butter using two knives or a pastry cutter until the mixture forms coarse crumbs. Set aside.
-
Make the batter: In a large bowl, whisk together oats, malted oat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
-
Add applesauce, milk, oil, vanilla, and egg. Stir until just combined—don’t overmix.
-
Scoop batter into muffin cups, filling each about ¾ full. Top with streusel.
-
Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
