Description
A sifted flour milled from a single variety of soft white wheat, freshly stone-milled in Amarillo, Texas. Soft white is the mildest, palest wheat we mill: low in protein and weak in gluten, with none of the color or faint bitterness that even soft red carries. It gives you a clean, sweet flavor and a fine, tender crumb in cakes, cookies, muffins, scones, and delicate pastry. We sift out most of the bran for a smooth, light flour, and stone-milling keeps the oils and flavor that industrial milling strips out. Reach for it when you want a pale, tender bake and a flavor that stays out of the way.
