Description
A sifted flour milled from a single variety of hard white wheat, freshly stone-milled in Amarillo, Texas. Hard white is the everyday bread wheat: the same strength as hard red for a tall, open loaf, but lighter in color and milder and sweeter in flavor, with none of the bran bitterness. We sift out most of the bran for a smooth, light crumb, and stone-milling keeps the oils and flavor that industrial milling strips out. Reach for it when you want everyday bread that still tastes like wheat.

This is a provenance flour, not a blend. You know the variety, you know where it grew, and you know it was milled the week you ordered it. We stone-mill our identity-preserved grain to keep the natural oils, nutrients, and flavor that industrial milling strips out.
